Kakigori (かき氷) 🍧is a traditional Japanese dessert made of shaved ice, often flavored with syrup and sweeteners.
Unlike snow cones or other shaved ice desserts, kakigori is known for its finely shaved ice that has a soft, fluffy texture, similar to fresh snow.
The ice is typically shaved using a special machine that creates these delicate, snow-like shavings.
Popular flavors of kakigori include strawberry, melon, lemon, green tea (matcha), and sweet red bean (anko). It’s often topped with condensed milk for extra sweetness. Some modern variations also include fresh fruit, mochi, or other creative toppings.
Kakigori is especially popular during the hot summer months in Japan and can be found at festivals, specialty shops, and cafes.
It’s a refreshing treat that has been enjoyed for centuries, with a history dating back to the Heian period (794-1185), when ice was stored in mountain caves and served to the aristocracy. Today, kakigori continues to be a beloved summer dessert, enjoyed by people of all ages.
